It’s Meatless Monday! And it’s the middle of summer. So, here is a light, flavorful meal that requires zero use of a stove!
The Good in this? It’s always good to have several vegetarian meals throughout the week. We know that reducing the amount of meat we consume can lower our risk of heart disease, certain cancers, and improve blood pressure. This recipe is perfect for those on the fence about vegetarian meals because it tastes so similar to actual chicken salad. Try it out and let me know what you think!
Lemon Basil Chickpea Salad
1 can chickpeas, drained and rinsed
1/4 c basil, chopped
1 T lemon juice
2 T mayo
1/4 tsp pepper
1/8 tsp salt
Place all ingredients in blender and pulse until mixture is still chunky, not smooth. Serve in a pita pocket or bread of choice.
