One Pan Potato Kale salsa chicken

Here’s another quick meal that’s easy to make and clean up is a breeze, Potato Kale Salsa Chicken! This is a spin on a traditional salsa chicken. Basically turning it into a casserole of sorts. This dish is the perfect balanced meal. Believe it or not, I do eat meat some of the time. But when I do, I like to have a lot of vegetables with it most of the time. What can I say, it’s the dietitian in me. Anytime you are able to get a leafy green in, you’re doing your body some good.

What is the best sheet pan to use for one pan meals?

Whatever you have works. I used a glass 9×13 casserole dish here, but a standard sheet pan would also work. You just want to make sure it has a little depth to it so all of your ingredients can fit. Since this Potato Kale Salsa Chicken has chunkier ingredients, you want them all to stay on the pan.

What are the benefits of eating kale and leafy greens?

Leafy greens are packed with nutrients and a good way to get in calcium if you are not consuming dairy products. Additionally, they are packed with Vitamin C, Vitamin K, and iron.

Is Kale a superfood?

The term “superfood” is a marketing term generally used to refer to foods that are high in vitamins, minerals and antioxidants. Kale is very nutrient dense (high amount of nutrients with little calories). I like to caution people to be mindful of being swayed by weighted terms such as “superfood” because it is not regulated. You don’t want to be at some supplement store and buy out the shelf because superfood is written all over the bottle. Aim for balance and try to consume a variety of nutritious foods daily.

Do potatoes cause weight gain?

No! Such a myth. Potatoes are highly nutritious. They are an excellent source of potassium and contain more than bananas! We often times eat potatoes deep fried or smothered, which can increase the calorie content, leading some to believe it is the potato that causes undesired weight gain. Roasting or baking potatoes are a great way to get this nutritious root veggie in while being mindful of excess calories. However, French fries and other tasty potato dishes have their place as well.

Ingredients

  • 1 lb red potatoes
  • 10 ounces fresh chopped kale
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoon olive oil
  • 1 lb chicken breast diced
  • 2 cups salsa
  • 2 cups shredded cheese
  • cilantro for garnish

Instructions

  • Preheat oven to 400°F. Cut red potatoes in fourths evenly and spread on the bottom of a 9×13 glass casserole dish. Top with kale and season with olive oil, garlic powder, onion powder, salt and pepper. Toss to combine seasoning. Layer raw diced chicken breast on top of potatoes and kale. Spread salsa evenly on top of chicken and top with cheddar cheese. Cover with foil and bake for 15 minutes. Remove foil and bake for another 10 minutes until potatoes are tender, kale is crispy, and chicken is cooked through. Remove from oven and garnish with cilantro

    Umm you used all of my favorite foods. I use kale in my salads but you’ve inspired me incorporate it into other recipes. I will definitely try this!!
